Matcha Green Tea & Chia Seed Pudding

This takes almost no time at all to throw together.Yes, it looks a bit scary I realize, but it tastes fantastic! Taking the extra few seconds to grate some dark chocolate on top really adds oomph to the flavor. I like to use a really good organic dark chocolate like the Endangered Species Panther that my friend Tawnie brought over! Thanks for amping up our breakfast, darlin!
3 Minute Matcha Chia Pudding
Meet your matcha! This recipe is delicious, loaded with antioxidants, and so easy to whip up!

Ingredients
3 tablespoons chia seeds
1/2 cup milk - I like to mix half and half coconut milk and moo-cow milk
1 teaspoon matcha powder
1/2 teaspoon vanilla extract
1-2 tablespoons honey (sweeten to your liking)
1 scoop protein powder (today I used Amazing Grass Vanilla Chai
a grating of dark chocolate

Topping suggestions:

 fruit of your choice, I like to keep bags of frozen fruit for an easy way to add vibrant flavor- today I made it with mango- DELISH!!!!

Preparation

Add all ingredients into a bowl. Combine together well using a fork. Let it sit for ten minutes. Sprinkle fruit, chocolate, or any of your favorite toppings into the bowl. I like to grate some dark chocolate on top (it's a superfood so no guilt!)

Ch Ch Ch CHIA! From Ancient Superfood To Modern Day Daily Superfood

I first realized that chia seeds were for more than just "ChchchIA!" a few years ago and started adding them to all kinds of stuff! Smoothies, juice, salads, cookies, homemade granola bars, ANY food. They make your food go further as well as your sense of fullness and energy- they make a great binder for meatloaf. One of my favorite quick breakfasts is to take a flour tortilla and smear it with a nut butter, sprinkle it with chia seeds, then roll up a banana in the whole shebang. It WILL keep you full till lunch! 


Not only are they gluten/grain free naturally, but one tablespoon of Chia Seeds has more calcium than a glass of milk, more Omega-3s than Salmon, and more antioxidants than blueberries. Perfect? Almost… they do get stuck in your teeth sometimes :-) 
They also give you tons of energy but also won’t keep you awake at night and are supposed to be great for weight loss. Because they can absorb many times their size/weight in liquid, they are great for preventing dehydration during exercise or exposure to heat.
Supposedly, the Aztecs, Mayans, and Incans used chia as a staple of their diet and as an energy food. Chia means “strength” in the Mayan language, and they were known as the “Indian Running Food” because runners and warriors would use them for sustenance  while running long distances or during battle.
According to Mountain Rose Herbs they contain “Essential fatty acids alpha-linolenic and linoleic acid, mucin, strontium, 30% protein, Vitamins A, B, E, and D, and minerals including calcium, phosphorus, potassium, sulphur, iron, iodine, copper, zinc, sodium, magnesium, manganese, niacin, thiamine, silicon, and anti-oxidants.”
Additionally,  “They are currently being used for their nutritional and medicinal properties, endurance for athletes, for suppressing the appetite, weight loss, leveling blood sugar, and for aiding intestinal regularity. Chia seeds readily dissolve into the water, creating a substance that looks like gelatin. This gel-forming action is due to the soluble fiber in the Chia seed. Researchers believe that this same gel-forming phenomenon takes place in the stomach when Chia seed is consumed, thus creating a physical barrier between carbohydrates and digestive enzymes and slowing the conversion of carbohydrates into sugar. Slowing the conversion of carbohydrates into sugar helps with endurance and metabolic rates, which is beneficial for athletes and others”.
For weight loss, Chia seeds are an appetite suppressant, and Chia gel may be used to replace food within recipes. Bulking up a meal with Chia gel helps lessen the amount of food consumed, since Chia gel is primarily made up of water. Chia gel may also be used in place of fats within recipes, even within baked goods. Chia seed has hydrophilic properties, and can absorb more than 12 times its weigh in water. Because of this, Chia seeds can prolong hydration, helping retain moisture and regulate more efficiently the body’s absorption of nutrients and body fluids, including electrolyte balance.

Strawberry Coffee Smoothie yumminess


The last few days got me all revved up to buy some more strawberry coffee mix from Lip Smackin Creations, but when I went to their Etsy page, they were no longer around :-( I wanted to add it to the smoothies I've been having in the mornings for breakfast on my long train ride into the city since I can avoid getting in trouble for eating but still break my fast. I also like the idea of adding some caffeine to my morning without having to urgently poo during an hour and a half commute. Brewed coffee does a number on my princess innards. Le sigh. What's a girl to do? Well, figure out an alternative, obviously. Woot!



Strawberry-Coffee Smoothie Recipe

  • a large handful of strawberries (I like them frozen) 
  • 1 teaspoon instant coffee grounds (brewed coffee makes it too runny) 
  • 1 banana, peeled (if you have bananas going to mush, stick them in the freezer then pull them out to make great frozen smoothies!) 
  • 1 tablespoon chia seeds (this is a great way to add amazing extra nutrients as well as helping to create a fullness. Here is a great list of all the amazing benefits of chia seeds. I have become a huge fan.) 
  • 1 scoop protein powder (I used vanilla protein powder by APS, their grass fed whey is great if you aren't a vegan. The whey comes from 100% grass fed cows with no antibiotics or hormones. You can actually buy it at Whole Foods and Albertsons.) I then tried it with the chocolate powder and it was amazeballs
  • 1/2 teaspoon vanilla extract if you use unflavored protein powder
  • 1 cup unsweetened coconut milk or Greek Yogurt


The coffee was a nice, subtle addition and gave me an extra energy boost without being overwhelming. The chia seeds and protein powder made it quite filling, which was especially helpful on a day when I wasn't allowed a lunch until 3 in the afternoon. (though I did sneak a yummy kumquat and persimmon fruit leather when no one was watching. I work for sadists :-)  That's a joke, please don't fire me!) 
Tomorrow I'm gonna try it with a chocolate powder and see how they compare......
